It’s normal for us to look/search for healthy recipes . We often try to recreate famous dishes by changing the ingredients so that they become healthy. We often replace maida (flour) with aata (wheat flour). Or we replace sugar with honey as the latter is healthier.

We also tend to look for healthy breakfast recipes. Breakfast is an important part of our diet and it’s important to eat a healthy breakfast daily.

Many a times, we have leftover rotis from previous day’s dinner. These rotis can be used for making this healthy Leftover roti Upma for the next day’s breakfast. You can also give this healthy upma to your kids in their lunch box or tiffin. If you go to office and want a quick yet healthy tiffin recipe, then also this is a good option for you!
This is an easy breakfast recipe. If you have some leftover rotis then all it takes is 15 minutes to cook this recipe. That’s why, it is good for kid’s lunch boxes also.

What’s the cooking method?
The process is quite simple. We will firstly tear the rotis into small pieces and would add these roti pieces into a blender jar. Now blend till a powder like mixture is formed. This step is important as this forms the base of our healthy leftover roti upma.

The next step is to finally cook the upma. We will add some finely chopped onions , some spices and peas; along with the powdered roti mixture in this recipe.

You can eat this along with a glass of breakfast smoothies/milkshakes. This would make it a complete meal breakfast.

Ingredients
  • 2 Rotis (Leftover or freshly prepared )
  • 1 Chopped Onion
  • 1 Chopped Green Chilli
  • 1 tablespoon Matar (Peas)
  • 10-12 Curry Leaves
  • Salt to taste
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon garam masala
  • 1 tablespoon oil
Instructions
  1. Roughly break the rotis into pieces. Put them in a mixer jar. Blend it till a powder like mixture is formed.

  2. Take a medium sized pan. Add oil. Heat it. Add the chopped onion. Cook it for 2-4 minutes, on a low flame.

  3. Add peas and curry leaves. Saute, on a low flame, for 3-4 minutes.
  4. Now add the salt, red pepper powder, green chilli and garam masala. Saute this and cook for 1-2 minutes.
  5. Add the powdered rotis. Saute continously for 2-4 minutes. The powdered rotis will change the colour from light brown to golden(dark) brown. Now add 1-2 tablespoon water. Cover this with a lid. Cook, on a low flame, for 2-3 minutes.
  6. Remove the lid and saute for about a minute.
  7. Leftover roti upma is ready. Serve hot!
