Eggless Marble Cake : How to make best eggless marble cake at home, without using eggs. Prepare this easy eggless cake for your tea time!

But somehow the very basic cake recipes were still not published on the blog. So, today I am sharing one of the most popular simple tea time cake recipe – Marble Cake.
A marble cake is a combination of chocolate and vanilla cake. It’s like best of both the worlds!
There are many different types of cake and marble cake is one of the most loved cake.
It is also a popular tea time cake in India.

Eggless Vanilla and Chocolate Marble Cake
When we hear the term ‘marble cake’, the very first thought that comes to our mind is a cake consisting of both chocolate and vanilla.
But ideally marble cake doesn’t mean that the cake would contain chocolate and vanilla flavor. There can be other flavors also. Like strawberry marble cake, banana and chocolate marble cake, chocolate orange marble cake etc.
For a cake containing flavors of chocolate and vanilla, a more appropriate term would be vanilla and chocolate marble cake.
However the term ‘marble cake’ has become so synonymous to vanilla and chocolate marble cake. that it has literally substituted that term. Even a google search for the term ‘marble cake’, lists all the recipes of vanilla and chocolate marble cake only.
How to make eggless marble cake at home?
(Quantity of all the ingredients (measurement of ingredients) are given below, after the step by step explanation)
So now let’s see how to prepare an eggless marble cake.
The ingredients are very basic –
Maida (All purpose flour)
Cocoa Powder
Baking Powder
Baking Soda
Vanilla Essence
Curd (Yogurt)
Milk
Butter
Sugar
We will begin by adding baking soda into the curd. Curd in this recipe acts as an egg substitute. Egg has many functions in baking. An egg basically makes the cake soft and moist. It also helps the cake batter in rising. That work is performed by curd here. Combination of curd and baking soda helps the cake batter in rising, which in turns make the cake light and spongy.
STEP 1.
Take a small bowl. Add curd. Add baking soda. Mix well. Cover this bowl with a small plate and leave this for 5 minutes. After 5 minutes, you will see that the curd has increased in volume and it has tiny bubbles. This is due the reaction of baking soda and curd. This will help the cake batter in rising and will make the cake soft and moist.
STEP 2.Â
Take a mixing bowl. Add butter. Remember to use room temperature butter. Beat it using a hand mixer or a hand whisk. You have to beat it till it gets light in color and it looks creamy. (With a hand mixture, you will achieve this texture in around 2 minutes of beating. With a hand whisk, you will achieve this texture in 3-5 minutes of beating).

The butter should get light and creamy like this.
STEP 3.
Now add powdered sugar. If you don’t have powdered sugar, then simply add the regular granulated sugar into a blender jar and blend till you get a fine powder. Measure this and use.
You don’t have to add the entire amount of powdered sugar all at once. Add some amount of it. Beat it. Again add a small amount of sugar. Beat. Repeat this process.
STEP 4.
Now add the curd + baking soda mixture. Also add vanilla essence. Beat it for 1 minute.
STEP 5.
In a separate bowl, put a sieve. Add maida (all purpose flour) and baking powder. Sieve it nicely. Sieving is an important step. Don’t avoid it!
STEP 6.
Add the dry ingredients into the wet ingredients. Just like sugar, you don’t have to add the entire amount of dry ingredients at once. Add a small amount of dry ingredients. Mix with the help of a spatula.
Again add a small amount of dry ingredients. Mix with the help of a spatula. Repeat. If the batter is too thick, add milk. (For this recipe, you might be required to add around 1/4 cup of milk).
STEP 7.
Now take out around 1/4 cup of the cake batter into a separate mixing bowl. Add cocoa powder and mix well.
STEP 8.
Now you have two cake batters – Vanilla and chocolate.
Take a cake tin. Add around a tablespoon or two of vanilla cake batter.
After this, add a tablespoon of chocolate cake batter. Again add a tablespoon of vanilla cake batter. Now add a tablespoon of chocolate cake batter. Repeat.
After you have added the entire amount of both the cake batters, take a toothpick or a cake tester and just swirl it around the cake batter in the cake tin a few times to create a marbled effect.
Remember not to over do this otherwise you won’t get a proper marble effect. Once or twice is enough!
STEP 9.
Bake at 180 C /350 F for 30-35 minutes or till a toothpick inserted into the center of the cake comes out clean.
STEP 10.
Let the cake cool down completely after it has baked. Don’t try to take it out from the cake tin when it is hot. You will break the cake if you do this.
After it has completely cool down, run a knife around the edges of the cake tin. Place a plate on the cake tin.
Invert the cake tin + plate. The cake should come out. If it doesn’t, tap the cake tin a little bit from the sides and the bottom.
Slice and enjoy your homemade eggless marble cake with a cup of tea or coffee!
Eggless Marble Loaf Cake
I have prepared this cake in a loaf pan. You can use any cake tin you want – Square, round, heart etc.

Add the dry ingredients into the wet ingredients. Mix till you get a smooth cake batter.

Take out around 1/4 cup of the cake batter into a separate mixing bowl. Add cocoa powder and mix well.

Take a cake tin. Add both the cake batters alternatively. After you have added the entire amount of both the cake batters, take a toothpick or a cake tester and just swirl it around the cake batter in the cake tin a few times to create a marbled effect.

Bake at 180 C /350 F for 30-35 minutes or till a toothpick inserted into the center of the cake comes out clean.
