How to make eggless cinnamon cake?

The recipe is quite simple. The basic ingredients for this cake include :
Maida (All purpose flour).
Sugar (Powdered)
Butter (At room temperature)
Baking Powder
Milk
White Vinegar
Cinnamon Powder
Now let’s see the step by step process of making this eggless cinnamon tea cake –
(Quantity of all the ingredients (measurement of ingredients) are given below, after the step by step explanation)
STEP 1.
Firstly, we will mix cinnamon and sugar together. Just add sugar and cinnamon powder in a bowl and mix properly with a spoon.
I’ll recommend you to use powdered sugar for this recipe. If you don’t have powdered sugar, then simply prepare it at home. For this, add the regular granulated sugar into a blender jar and blend till you get a fine powder. Measure this and use.

Why are we mixing powdered sugar and cinnamon first?
This is because we want a good flavor of cinnamon in the whole cake. By mixing cinnamon with sugar, we are distributing its flavor in the entire cake. Later on, we will beat sugar (sugar and cinnamon mixture) with butter and in this way we will get a good blend of sugar, cinnamon and butter.
STEP 2.
In a small bowl, add milk and white vinegar. Mix well. Keep aside.
STEP 3.
Now take a separate bowl. Add butter. Beat it with a hand mixer or a hand whisk. Beat it for 2-3 minutes or till you get a light and creamy texture.

STEP 4.
Add powdered sugar and cinnamon mixture. You don’t have to add the entire amount of powdered sugar (and cinnamon ) all at once. Add some amount of it. Beat it. Again add a small amount of sugar and cinnamon mixture. Beat. Repeat this process.

STEP 5.
Add milk + vinegar mixture. Mix nicely.
STEP 6.
Add vanilla essence and mix.
STEP 7.
In a separate bowl, put a sieve. Add maida (all purpose flour), cornflour and baking powder. Sieve it nicely. Sieving is an important step. Don’t avoid it!

STEP 8.
Mix dry ingredients with wet ingredients. The cake batter is ready!

STEP 9.
Add the cake batter into the cake tin. Bake at 180 C /350 F for 30-35 minutes or till a toothpick inserted into the center of the cake comes out clean.

If you like eggless plain tea time cakes, then you will surely like this cake.
I have also decorated this cake with some chopped dry fruits like almonds, cashews and walnuts. Just add the chopped dry fruits on top of cake batter (before keeping the cake in the oven).

You can also add chopped pistachios, chocolate chips, caramel chips, tutti frutti etc.

- 3/4 Cup Maida (All purpose flour)
- 1/4 Cup Cornflour (Cornstarch)
- 1 Teaspoon Baking Powder
- 1 1/2 Teaspoon Cinnamon Powder
- 1/2 Cup Sugar (Powdered)
- 1/2 Cup Butter (At room temperature)
- 1/2 Cup Milk
- 1 1/2 Teaspoon White Vinegar
- 1 Teaspoon Vanilla Essence
