Ingredients for Eggless Chocolate Banana Cake | Eggless Chocolate Banana Bread

Maida (All purpose flour)
Cocoa Powder
Banana
Butter
Sugar (Powdered Sugar)
Baking Powder and baking soda
Milk
Vanilla Essence
These are the basic ingredients needed for this eggless chocolate banana cake. I have used vanilla essence in this cake. if you want, you can also use chocolate essence in this cake. It would be better if you use powdered sugar instead of granulated sugar. If you don’t have powdered sugar, then simply add the regular granulated sugar into a blender jar and blend till you get a fine powder. Measure this and use.

You will need around 5 medium sized banana for this recipe. We will firstly mash the banana before mixing them with other ingredients. You can mash the banana using a fork. What I do is that I roughly chop the banana and add them into a blender jar. Blend them into a puree and use this. This not only reduced time but also helps in getting a smooth cake batter without any banana chunks in between.

Here are detailed instructions with step by step photos –
STEP 1.
Take a mixing bowl. Add butter. Remember to use room temperature butter. Beat it using a hand mixer or a hand whisk. You have to beat it till it gets light in color and it looks creamy. (With a hand mixture, you will achieve this texture in around 2 minutes of beating. With a hand whisk, you will achieve this texture in 3-5 minutes of beating).

STEP 2.
Now add powdered sugar. If you don’t have powdered sugar, then simply add the regular granulated sugar into a blender jar and blend till you get a fine powder. Measure this and use.
You don’t have to add the entire amount of powdered sugar all at once. Add some amount of it. Beat it. Again add a small amount of sugar. Beat. Repeat this process.

STEP 3.
Add mashed banana / pureed banana. Mix with the help of a hand whisk or hand blender for a minute.

STEP 4.
Add milk and vanilla essence. Mix well.

STEP 5.
In a separate bowl, put a sieve and add maida (all purpose flour), cocoa powder, baking soda and baking powder. This is an important step, so don’t avoid it.

STEP 6.
Add the dry ingredients into the wet ingredients. Just like sugar, you don’t have to add the entire amount of dry ingredients at once. Add a small amount of dry ingredients. Mix with the help of a spatula. Again add a small amount of dry ingredients. Mix with the help of a spatula. Repeat till you get a smooth cake batter.
STEP 9.
Pour the cake batter into the cake tin. Bake at 180 C / 350 F for 30-35 minutes or till a toothpick inserted into the center of the cake comes out clean.
