Eggless Chocolate Walnut Cake Recipe

Let’s have a look at the recipe. For this cake, firstly chop the required amount of walnuts. I used finely chopped walnuts. If you want your cake to be a bit chunky, then you can use roughly chopped walnuts.
Firstly, take milk in a bowl/glass and add vinegar. Mix well and leave this for 10 minutes. The milk would get curdled due to the addition of vinegar. This step is important. The curdled milk (better to say buttermilk) would make the cake moist and would help the cake batter in rising.
The next step is to add oil in the mixing bowl. Add sugar and mix till sugar melts and dissolves in oil. Oil also gives moistness to this cake and is therefore an important ingredient.
Now we will add the curdled milk (buttermilk) prepared before. Mix nicely till a uniform mixture is formed. At this point, add vanilla essence. If you want, you can also use chocolate essence.
Now take a separate mixing bowl. Put a sieve. Add all purpose flour (maida), cocoa powder and baking soda. Sieve and keep the dry ingredients aside. Sieving is important as sieving the dry ingredients create tiny air pockets which eventually help the cake batter in rising.
After saving all the dry ingredients, add chopped walnuts. Just give it a mix so that walnuts gets coated with the flour mixture. This step ensures that walnuts doesn’t sink down to the bottom of the cake.
The next step is to finally mix the dry ingredients and wet ingredients. Add the dry ingredients into the wet ingredients and mix till a uniform cake batter is formed. Remember not to over-mix the batter.

Chocolaty Eggless Chocolate Walnut Cake Batter
Grease a cake tin with oil. Sprinkle some flour and tap the cake tin from all the sides so that the cake tin gets coated with flour. This step ensures that the cake doesn’t stick to the cake tin. Alternatively, you can use a parchment paper for this purpose. Grease the cake tin with oil. Cut the parchment paper according to the size of the cake tin and place it in the cake tin.
Add the cake batter. Top it with some chopped walnuts. Bake the cake at 180 C / 350 F for 30-35 minutes or till a toothpick inserted into the center of the cake comes out clean.
